Only 225 cases made. From a certified Biodynamic vineyard. This rare varietal in Lodi, California is a hero in Italy and France. Vermentino, as the grape is known in Italy, and Rolle in France, is known for its likability, versatility, and overall sexiness in the glass. This stunning white wine has texture and weight, and somehow stays gulpable with its mouthwatering acidity. Scrumptious with anything fried, spicy, salty, or seafood-y.
Delicious With
Linguine with clams, seared scallops, grilled shrimp, or roasted sea bass. Pesto pasta, zucchini or lemon risotto, and Caprese salad. Soft fish or chicken tacos with a squeeze of lime, or fennel-spiced pork sausage. Fresh and soft cheeses like mozzarella, ricotta, and feta. And anything fried, like a proper Fritto Misto di Mare.
Their Cred
While the Two Shepherds total production is small (~4,000 cases, 48,000 bottles,) their offerings are vast. Nicknamed ‘insane master of small lots’, William crafts about 15 different wines each vintage. All their wines are fermented with native yeast, aged on the lees in neutral barrels, minimally racked with no fining, filtration, or additions other than a small amount of Sulfur. They focus on uncommon varietals, cool climate or old vine plantings, often from the only few acres in California. Everything they make comes from Organic or Biodynamic vineyards.
