The name honors the town of Prosecco, which is a seaside village near the northern Adriatic Sea in Italy. The vineyards sit on hillsides near the Gulf of Trieste. The soil here features marine fossils from an ancient sea that imparts a unique, crisp minerality to the grapes. They make small-batch Prosecco using Glera grape (and Pinot Nero for the Rosé) and ferment to make a very dry "Brut" style. This wine contains about half the sugar of typical Proseccos. The founders follow a "farmer-first" philosophy and emphasize sustainability.
