Guímaro is a family-run winery located in the Ribeira Sacra region of Galicia, Spain, renowned for its steep, slate-laden vineyards overlooking the Sil River. The winemaker, Pedro Rodríguez Pérez, carries on a tradition that dates back generations, farming old-vine Mencía and other indigenous varieties by hand on vertiginous terraces. Embracing minimal intervention in both vineyard and cellar, Pedro crafts wines that are pure expressions of their rugged landscape—fresh, mineral-driven, and full of Atlantic character.
