Inspired by their cat, Wiley, who is depicted on the label, this wine comes from 45 year-old, dry-farmed, organic grapes. In a true ode to the holidays, this wine takes its inspiration from the wines of Beaujolais. This is a true carbonic wine with the grapes sealed in tank for 2.5 weeks while they magically ferment. Intensely fresh berry aromas jump out of the glass, then a rush of black cherry fruit, vibrant acidity and crunchy tannins. Serve slightly chilled.

Delicious With

Great with meatballs, and cured meats like sausage, bacon, ham, and terrines. The fruit-forward profile pairs well with Mediterranean dishes like ratatouille, roasted eggplant, or spiced lamb kebabs. Or try with full-flavored cheeses like aged Gouda, Manchego, and Parmesan.

Their Cred

Inspired by Rhone varietals and blends, winemaker William Allen began making wine in his garage. Over the years, his one-person micro-winery continued to expand and experiment, and he eventually earned the nickname, 'insane master of small lots'. Today he leases just a few rows here and there from unique, off-the-radar vineyard sites throughout Northern California. Two Shepherd's total production is small (~4,000 cases per year) but they produce a wide range of wines - about 15 different bottlings each vintage. All the wines are fermented with native yeast, aged on the lees in neutral barrels, minimally racked with no fining, filtration, or additions other than a small amount of sulfur.
