Planted in the late 40’s, this Sauv Blanc comes from vineyards that have been dry-farmed organically since its inception.

It’s the definition of “chilled out.” Fresh and zippy acidity meets a satiny texture - think guava, key lime, and lemon balm, with a whisper of grassiness and just a hint of green pepper, softened and mellowed by time. There’s a flirtatious tropical note, but it never shouts; instead, it dances lightly. It’s like a Loire Valley classic took a detour through California, picked up a little sunshine and swagger, and decided to stay awhile.

Delicious With

Fresh goat cheese, crudo or ceviche with citrus & herbs, Vietnamese spring rolls, or asparagus with lemon butter or hollandaise. Also delicious with zucchini frittata, poached chicken with tarragon aioli, herbed couscous or tabouleh, or Greek mezze (dolmas, tzatziki, and halloumi.)

Populis is a natural wine project founded by winemakers Shaunt Oungoulian and Diego Roig. The duo met while studying at UC Davis and later honed their craft through apprenticeships in France with renowned producers such as Didier Barral and Philippe Valette. Their shared vision led to the creation of Populis in 2014, aiming to produce wines that are vibrant, expressive, and accessible. Based in Orinda, California, Populis operates out of the basement of Shaunt’s parents' house, allowing for a controlled environment free from external influences. The team focuses on sourcing grapes from historic, organic vineyards in Mendocino County, including the Venturi and Upton vineyards, which are among the oldest Sauvignon Blanc sites in California. The winemaking process emphasizes minimal intervention, with wines being fermented using native yeasts and aged in stainless steel tanks. Additions are limited to a small amount of sulfur before bottling, if necessary. Populis wines are crafted to be fresh, lively, and approachable, reflecting the duo's commitment to producing wines that are both enjoyable and reflective of their California roots. Their approach underscores the belief that great wine begins in the vineyard, with a focus on organic farming and sustainable practices.
