This ‘pét nat,’ or effervescent wine made by spontaneously fermenting with its natural yeasts, is a party for your tastebuds! A tickle of orange blossom and grapefruit, a splash of juicy apricot and peach, with a coating of honeydew on the tongue. Then a dusting of sweet mint and honey blossom balance out the fruit flavors nicely. Its fizzy, textured, and scrumptiously delicious.

The bright acidity and effervescence of this pét nat can cut through the richness of fresh mozzarella, tomatoes, and basil. Try with spicy foods like Thai broths, curries, and Sichuan specialties. Or for a lighter meal, with shellfish ceviche.

Their Cred

Yves Dietrich, along with his sons Pierre and Jean, manage a distinctive and influential vineyard. Yves oversees the vineyard, Jean handles the cellar operations, and Pierre manages the commercial aspects. In 1991, Yves took over the family farm and transitioned it to organic farming in 1999, then to biodynamic practices in 2003. In 2017, they built a bioclimatic wine cellar in Europe's largest thatched building, shared with Domaine Jean Paul Schmitt. The estate spans 18 hectares and is known for producing wines that are precise, direct, engaging, and clear.
