The name refers to how they make it and what you should do while drinking it. This year (or vintage) features all the Pinots (Gris, Blanc, and Noir). All of the grapes are fermented whole-cluster and via carbonic maceration giving it this snazzy, zippy, Hawaiian-punchy, mineral-laden crispness. It is perfect with just about everything or perhaps preferably, nothing at all.

Pair with simple roast white meats like turkey, chicken, or pork. Great for pizza night, anything with a red sauce, or stand alone as an aperitif.

Their Cred

Fossil & Fawn is a unique project of Jim Fischer Jr. and Jenny Mosbacher. From Jim’s family vineyard, Silvershot (formerly Crowley Station), located in the Eola-Amity Hills AVA, it is the careful study and experimentation of a single place. The Fischer family lived at the Silvershot property since the 1970’s, but it wasn’t until 1999 that they began planting their own vines. They handplanted 15 acres of their own rooted vine cuttings, gathered from neighboring heritage vineyards. Jenny and Jim Jr. handle all of the winemaking while Jim Sr. handles all of the viticulture which is both dry-farmed and sustainably managed.

Since the 2011 vintage, Jenny and Jim Jr. have been producing tiny batches of fascinating wines. Sourcing from this singular place along with local vineyards farming with similar philosophies, they are at both a celebration of tradition and a riveting look at the future. In the cellar they keep it simple: native fermentations, no additions, no adjustments, neutral oak, no filtering, and no fining.
