This rich, dark colored dry Lambrusco is made Col Fundo, a traditionally natural way leaving sediment from the yeast in the bottle, giving the wine this beautiful texture and a slight haze in the glass. It’s nicely aromatic with fresh cherry, violet, blackberry, and sweet spices. Super dry and earthy with ripe cassis, black cherry, rhubarb, and a stony earthy finish.
Antipasti (of course) of cured meats, sausages and ham, Parmesan and Grana Padano. Yummy with stuffed pasta topped with meat sauce. Great with all kinds of braised, roasted, grilled meat. This wine has enough weight and acidity to be paired with tomato-based sauces, and goes perfectly with pizza.
Nestled in the Appennine Mountains, the vineyards sit at a relatively high altitude, which give the wines intense aromas and lively acidity. The grapes are all grown organically and harvested by hand. Terraquilia is dedicated to making sparkling wines in the ancestral method of Italy, without any grape must or yeast additions, as are used in other sparkling traditions like in Champagne.
