Like a Southern French Bordeaux

Like crushed mulberries spread over fresh cream-textured leather. Dried forest leaves, pepper trees, and cranberry relish. This wine is rustic in that it has the earthy, far-off-place taste and smell, but it’s also so clean (there’s none of the musty funk that sometimes come with a traditionally old-world wine). A cozy-up-by-the-fire and read-in-a-cabin kind of wine. Made in a purely natural way (spontaneous fermentation, nothing added), this is, in every sense, a cutting edge artisanal wine.

Delicious With

Great with all the classic southern French flavors: aioli, andouille sausage, grilled lamb or pork chops. Also delicious with Chinese five spice pork and surprisingly perfect with aged goat cheeses like Banon (French goat cheese from Provence region).

Their Cred

In 1967 Jean Salen bought Domaine Les Bastides and fell in love with planting vineyard parcels and cultivating grapes. Jean was committed to Provence’s traditions and to natural wine (long before it became cool). His daughter, Carole, earned degrees in viticulture and enology from universities in Bordeaux and Beaune, and returned to the domaine in 1987 to work side by side with her father. Jean passed away in 2015 and Carole, now in charge of the domaine, continues her father’s practice of making rare and regionally-traditional wines. With just two employees and one or two seasonal part-timers during harvest, Carole finds organic farming to be second nature, and extends its logic to the cellar, where her ferments are spontaneous, sulfur additions are kept to a minimum, acid additions do not exist, fining rarely happens, and filtrations are kept to a minimum.
