Chardonnay sourced from incredible, biodynamic vineyards in Hautes Côtes de Beaune in Burgundy, France. Made by two friends, a sommelier and a winemaker, who keep each other on their toes and push the envelope. To us, this wine is scrumptious, lemon meringue pie! It almost doesn’t smell like a Chardonnay – delicately perfumed with lemon, a slight waft of fluffy meringue, with a beautifully light finish and a lingering pie crust that will make you take another sip. Limited production on this wine – we only have access to 5 cases! With their friends helping to harvest and make wine, it’s a passion project that came out pretty damn good!
Beautiful with summer stone fruit, light milky cheeses like ricotta or mozzarella. This wine begs for fresh ingredients, so pour this with your meal on a farmer’s market day – anything with fresh basil, sweet yellow squash, butter lettuce, carrots, shell beans, or corn. Gorgeous with lighter proteins like chicken, white-fleshed or buttery fish like cod or sea bass.
Willy is the winemaker. Paul is the farmer. After working at prestigious wineries in Burgundy, Willy gained a deep knowledge of the terroirs and vineyards of the Côte de Beaune (northern part of Burgundy region in France). Paul was trained in the art of tasting in London and Paris working as a sommelier. When they got together, they decided to make wines from fully biodynamic vineyards, using only wild, indigenous yeasts, to make wines with unbridled flavor and freshness. They are making some of the most exciting wines coming out of Burgundy right now.
