The beauty of an Oregon Pinot Noir is that you don’t have to overthink the pairings – it has this natural acidity that pairs gorgeously with so many foods. Meat is a classic option, especially richer cuts like duck breast or beef ribeye, or enjoy the delicacy of a perfectly prepared filet mignon or roasted salmon. Pairs exceedingly well with vegetarian options like nuts (hazelnuts in particular) and a variety of squash and root vegetables like beets and yams. Excellent with butternut squash soup as the wine enhances some of the natural sweetness.
