The breakfast wine of summer
Over Easy is fizzy, fruity, and refreshing. It’s yeasty, like a good hefeweizen beer with orange blossom and brioche. It’s got tons of white peach and a little salty beach air. At only 9% alcohol, this is great for anytime of day. If you love grapefruit mimosas, radlers, or sour saisons, this bubbly is for you!

Since this is so light, it’s a great way to start any gathering as a cocktail all on its own. Also fun to pair with brunch-style foods like breakfast tacos, Eggs Benedict, pancakes or Croque Madame. Or start the evening with some passed apps like mushroom tarts or spanakopita.
Say When started in 2013 by Rachel and Michel DeAscentiis . Not long after they met, Rachel was preparing to bottle the first wine of her own — a humble barrel of Pinot Noir made on the side while working full time as an assistant winemaker at Loring. While proud of the wine itself, everything outside of the bottle still needed to be worked out. That's when Michel jumped in. After several long distance phone calls that unintentionally turned into creative brainstorms, they started Say When. They are a hands-on winery making all of the wines in a shared space in Lompoc, CA. Rachel focuses on the physical winemaking, and every decision in the winery is made together. Their grapes all come from vineyards in the Central Coast, California that are farmed and picked by hand. More than half of they wines come from vineyards certified SIP Sustainable, Organic, or Biodynamic, and they are moving the entire production in that direction.
